hand-picked and stored in containers holding up to 15 kg
wine-making
Grapes are carefully selected in a specific area of the winery. The containers with the grapes are stored in a cold room until 0°C, then the grapes are pressed and the aromatic precursors are extracted. Vinification in steel tanks at 18°C lasts about 10 days. Follows a short refinment period on non toasted french tonneau.
Fining
Lees stirring for 3 months, then stored in bottle for 1 month
